Citrus Chicken

This is SO good. It's a great light dinner dish for summer. Sweet and tangy, it goes great as part of a pasta dish or to accompany a salad. The original recipe comes from Kayotic. 
This is the kind of dish that makes me feel like I would enjoy being a housewife with 4 little kids running around everywhere. I would chase them out of the kitchen in my classy apron as I prepared a healthy, but yummy dinner ready just as my husband came home from his fancypants job. We'd live in a library which we converted into a house. With big ol' fireplaces in half the rooms and enough books so that our children would never get bored. And fancy art everywhere. And caves in the basement with natural hot water springs. And romantic candles. 

It will happen. Step one is making this citrus chicken.


4 chicken breasts 
ginger
2/3 c orange juice + some orange zest
1/2 c chicken broth
2 tbls lemon juice
1 garlic clove
1 1/2 tbsp honey
2 tsp corn starch
chili flakes
1 medium orange, sliced
1 medium onion, also sliced

Combine orange, honey, broth, garlic and ginger. Add a smidgeon of tabasco sauce and lemon.
Make a cornstarch and water mixture, add it to the orange sauce.


Bring sauce to a boil, then simmer for 5-7 minutes.
Season the chicken with salt and pepper. Cook it over medium heat in oil and butter until all surfaces are golden brown.



 Place the chicken in a baking pan and pour the orange sauce over. Place the sliced orange and onion over the top of the chicken. Bake at 350 for 20-30 minutes.

  1. Good Morning... even though it is not morning... if you want to make a whole chicken i'd recommend putting apples in the chest cavity, it gives a really nice flavor and gives it more juiceyness.
